Crunchy, golden air fryer pumpkin seeds ready in under 10 minutes. A simple, foolproof snack made with fresh pumpkin seeds, oil, and salt — perfect for fall snacking or anytime you crave something savory.

  • 1 cup fresh pumpkin seeds (from a carving pumpkin)
  • 1 tablespoon olive oil or avocado oil
  • ½ teaspoon flaky sea salt (or to taste)
  • Optional seasonings: garlic powder, smoked paprika, cayenne, cinnamon sugar, everything bagel seasoning, chili powder, lime zest, brown sugar, cinnamon, melted butter, grated Parmesan

Instructions

  1. Rinse the pumpkin seeds in a colander under cold water, rubbing off the biggest pieces of pulp. Don’t worry about getting them perfectly clean.
  2. Dry the seeds thoroughly by spreading them on a paper towel or clean kitchen towel and patting them dry. Let them sit for 5-10 minutes if possible.
  3. Preheat your air fryer to 350°F (175°C) for 2-3 minutes.
  4. In a medium bowl, toss the dried seeds with 1 tablespoon oil and ½ teaspoon salt until evenly coated. Add any optional seasonings now if desired.
  5. Spread the seasoned seeds in a single layer in the air fryer basket. Do not overcrowd; work in batches if needed.
  6. Air fry at 350°F for 5 minutes. At the 3-minute mark, shake the basket to redistribute the seeds.
  7. Check for doneness: seeds should be golden brown and smell toasty. If not crunchy enough, cook for 1 more minute.
  8. Transfer the seeds to a plate or paper towel to cool completely. They will continue to crisp as they cool.

Notes

Dry seeds thoroughly for best crunch. Don’t overcrowd the basket. Shake halfway through cooking. For stronger seasoning, add extra salt or spices after cooking. If seeds lose crunch, re-crisp in air fryer at 350°F for 2 minutes. Store in airtight container at room temperature for up to 2 weeks.
