  • 2 cups (180g) rolled oats (old-fashioned)
  • 1 cup (245g) pumpkin purée (100% pumpkin, not pie filling)
  • 2 medium ripe bananas, mashed (about 1 cup or 240g)
  • 2 large eggs, room temperature
  • ⅓ cup (80ml) honey or maple syrup
  • ¼ cup (60ml) coconut oil or butter, melted and slightly cooled
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup (60g) chopped walnuts, pecans, or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two opposite sides.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth (about 1 cup).
  3. Add the pumpkin purée, eggs, honey (or maple syrup), melted coconut oil (or butter), and vanilla extract. Whisk until smooth and well combined.
  4. Stir in the rolled oats and let the mixture sit for 5 minutes to allow the oats to absorb liquid.
  5. In a separate small bowl, whisk together the pumpkin pie spice, cinnamon, baking soda, and salt.
  6. Sprinkle the dry ingredient mixture over the oat mixture. Fold together with a spatula until just combined. If using, fold in nuts or chocolate chips.
  7. Pour the batter into the prepared pan and spread into an even layer. The batter will be thick and slightly sticky.
  8. Bake on the middle rack for 22-28 minutes, until edges are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Cool in the pan for 10 minutes, then lift out using the parchment overhang onto a wire rack. Cool completely before slicing (about 30 minutes).
  10. Slice into 9 squares (3×3) or 12 smaller rectangles.

Notes

Don’t skip the oat soak—it makes the bars tender. Use room temperature eggs to prevent coconut oil from seizing. Cool completely before slicing to avoid crumbling. Bars taste even better the next day.
