  • 1 can (15.25 oz) whole kernel corn, drained
  • 1 can (14.75 oz) cream-style corn, undrained
  • 1 cup (8 oz) sour cream, room temperature
  • 1/2 cup (1 stick) unsalted butter, melted and cooled slightly

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Melt the butter in a microwave-safe bowl in 30-second intervals. Set aside to cool slightly.
  3. Drain the whole kernel corn well in a sieve. Do not drain the cream-style corn.
  4. In a large mixing bowl, combine both boxes of Jiffy corn muffin mix. Break up any clumps with a whisk or fork.
  5. Add the melted butter, sour cream, drained whole kernel corn, and undrained cream-style corn to the dry mix. Stir with a whisk or wooden spoon until just combined. A few lumps are fine; do not overmix.
  6. Pour the batter into the greased baking dish and spread evenly with a spatula. Tap the dish gently on the counter to settle air bubbles.
  7. Bake on the middle rack for 45-55 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with foil for the last 10 minutes.
  8. Let the casserole rest for at least 10 minutes before serving to allow it to set.
