  • 3/4 cup walnuts, chopped (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides, or grease the pan well.
  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth (a few lumps are fine). You should have about 1 cup.
  3. Add the pumpkin puree, melted coconut oil, brown sugar, egg, vanilla extract, and molasses (if using) to the bowl. Stir until well combined and smooth.
  4. Sprinkle the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt over the wet mixture. Stir gently until just combined—do not overmix. A few streaks of flour are okay.
  5. Fold in the chopped walnuts with a few gentle strokes. Reserve about 2 tablespoons for topping if desired.
  6. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle reserved walnuts on top and press them in gently.
  7. Bake in the center of the oven for 50-60 minutes. At the 45-minute mark, check the bread; if the top is browning too quickly, tent loosely with foil. The bread is done when a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Let the bread cool in the pan for 10 minutes, then lift it out using the parchment paper and transfer to a wire rack. Cool completely before slicing (at least 1 hour).

Don’t overmix the batter to avoid a tough bread. Use overripe bananas for best sweetness and moisture. Toast walnuts in a dry skillet for 3-4 minutes for extra flavor.
