  • 1 tablespoon kosher salt
  • 1 tablespoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin

Instructions

  1. Gather your ingredients. Measure out all the spices carefully—2 tablespoons smoked paprika, 2 tablespoons packed brown sugar, 1 tablespoon kosher salt, 1 tablespoon freshly ground black pepper, 1 teaspoon each garlic powder and onion powder, ½ teaspoon cayenne pepper (optional), 1 teaspoon dried oregano, and ½ teaspoon ground cumin.
  2. Toast the spices (optional but recommended): Heat a dry skillet over medium heat. Add smoked paprika, cumin, oregano, cayenne, garlic powder, and onion powder. Stir constantly for 1-2 minutes until fragrant but not burnt. Remove from heat and let cool slightly.
  3. Combine the toasted spices with the remaining ingredients. In your mixing bowl, add the toasted spices along with brown sugar, kosher salt, and black pepper. Whisk thoroughly so everything is evenly mixed.
  4. Store your dry rub. Transfer the mix to an airtight container. Keep it in a cool, dry place. It stays fresh for up to 3 months.
  5. Apply generously to your steak. Pat your steak dry with paper towels, then rub the mixture evenly over all sides. Let it sit for at least 30 minutes before cooking to let the flavors soak in (overnight in the fridge works wonders too).

Toasting the spices lightly before mixing enhances the smoky notes and releases essential oils. Let the rubbed steak rest for at least 30 minutes or overnight in the fridge for deeper flavor.
