Simple Rainbow Fruit Skewers with Easy Marshmallow Dip

A quick and colorful snack featuring fresh fruit skewers paired with a creamy, sweet marshmallow dip, perfect for parties and casual gatherings.

  • Strawberries, hulled and halved
  • Orange segments, peeled and pith removed
  • Pineapple chunks (fresh or canned in juice, drained)
  • Green grapes, halved if large
  • Blueberries
  • Purple grapes or blackberries
  • 1 cup (240g) marshmallow fluff
  • 4 ounces (115g) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/4 cup (30g) powdered sugar (optional)
  • 1 tablespoon (15ml) milk or heavy cream (optional, to thin dip)
  • Wooden or reusable metal skewers
  • Chopped nuts or shredded coconut (optional, for sprinkling on dip)

Instructions

  1. Wash all the fruit thoroughly. Hull and halve the strawberries, peel and segment the oranges carefully to remove pith, and cut the pineapple into bite-sized chunks. Halve grapes if large. Set all fruit in separate bowls.
  2. In a medium bowl, combine marshmallow fluff and softened cream cheese. Using a hand mixer on medium speed, beat until smooth and creamy.
  3. Add vanilla extract and powdered sugar if using. If dip is too thick, add milk or cream and mix until desired consistency is reached. The dip should be fluffy but spreadable.
  4. Take a skewer and thread the fruit in rainbow order: strawberry, orange, pineapple, green grape, blueberry, and purple grape or blackberry. Repeat until all fruit is used, making about 10 skewers per batch.
  5. Lay the fruit skewers on a serving tray. Transfer marshmallow dip to a bowl and sprinkle with chopped nuts or shredded coconut if desired.
  6. Serve immediately or chill dip and fruit separately for up to 2 hours before serving.

Notes

Use firm, ripe fruit to avoid mushy skewers. Keep marshmallow dip slightly chilled but not too cold for best texture. Assemble skewers just before serving or keep dip and skewers separate if preparing ahead. For dairy-free, substitute cream cheese with coconut cream and use vegan marshmallow fluff. Optional to sprinkle nuts or shredded coconut on dip for texture.
