  • 8 oz cream cheese (225g), softened, full-fat
  • 1/2 cup sour cream (120ml)
  • 1/2 cup Buffalo sauce (120ml), e.g., Frank’s RedHot
  • 1/2 cup blue cheese crumbles (70g), good quality like Maytag
  • 1 cup shredded cheddar cheese (100g), sharp
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Optional: chopped green onions or chives for garnish
  • Optional: celery sticks or tortilla chips for serving
  • Optional: Greek yogurt instead of sour cream for a lighter version
  • Optional: almond flour for thickening or coating in a low-carb baked version

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Shred the chicken into bite-sized pieces if not pre-shredded.
  3. In a mixing bowl, combine softened cream cheese, sour cream, and Buffalo sauce. Stir until smooth and creamy.
  4. Add garlic powder, onion powder, salt, and pepper to taste. Mix well.
  5. Fold in shredded chicken and half of the blue cheese crumbles and shredded cheddar cheese.
  6. Transfer the mixture to a baking dish or oven-safe skillet, smoothing the top.
  7. Sprinkle the remaining cheddar cheese and blue cheese crumbles evenly over the top.
  8. Bake for 20-25 minutes until bubbly and cheese is melted and lightly browned.
  9. Remove from oven and let cool for about 5 minutes.
  10. Garnish with chopped green onions or chives if desired.
  11. Serve warm with celery sticks, tortilla chips, or crackers.

Notes

Use room-temperature cream cheese to avoid lumps. Adjust Buffalo sauce to taste for desired heat level. If dip is too thick before baking, add a splash of milk or chicken broth. Tent with foil if top browns too fast. Leftovers can be refrigerated for up to 3 days and reheated gently.
