  • 1/2 teaspoon vanilla extract

Instructions

  1. Wash, hull, and slice 2 cups of fresh strawberries. If using frozen, do not thaw completely.
  2. Squeeze about 1/4 cup fresh lime juice (roughly 2 medium limes) using a citrus juicer to avoid seeds.
  3. Add strawberries, 1/4 cup white rum, 1/4 cup lime juice, 2-3 tablespoons granulated sugar, 1/2 teaspoon vanilla extract, and a pinch of salt into a high-speed blender or food processor.
  4. Add 2 cups of ice cubes to the blender.
  5. Pulse the blender first to break down the ice, then blend on high speed for 1-2 minutes until the mixture is thick, slushy, and smooth.
  6. Check consistency: if too thick, add a splash of water or more lime juice; if too thin, add more ice cubes and blend again.
  7. Spoon the slush dip into a shallow serving bowl to allow waffle cones to stand around it.
  8. Serve immediately with mini waffle cones for dipping. If holding for a while, keep covered in the freezer and stir every 10-15 minutes to maintain texture.

Notes

Use fresh lime juice for best flavor; bottled lime juice is not recommended. Pulse ice first to protect blender blades and avoid overheating. Chill serving bowl beforehand to keep dip icy longer. Use sturdy waffle cones to prevent sogginess; optionally toast cones lightly for extra crunch and aroma. For non-alcoholic version, omit rum and add sparkling water or lemon-lime soda.
