These Quick Thanksgiving Deviled Eggs with Crispy Bacon are the perfect holiday appetizer: creamy, tangy, and topped with smoky, crunchy bacon. Easy to make in just 25 minutes, they’re a crowd-pleaser that disappears before the turkey hits the table.

  • 12 large eggs
  • 1/3 cup mayonnaise
  • 2 teaspoons yellow mustard
  • 1 tablespoon pickle juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/8 teaspoon garlic powder (optional)
  • 6 slices thick-cut bacon
  • Fresh chives or parsley, finely chopped
  • Extra paprika for dusting

Instructions

  1. Place eggs in a single layer in a saucepan and cover with cold water by about an inch. Bring to a rolling boil over high heat, then cover, turn off heat, and let sit for exactly 10 minutes.
  2. Transfer eggs to an ice water bath and let cool for at least 5 minutes. Peel eggs under running water if needed.
  3. While eggs cool, cook bacon in a skillet over medium heat until deep golden brown and crispy, about 8-10 minutes. Transfer to paper towels to drain and cool completely.
  4. Slice each peeled egg in half lengthwise. Remove yolks to a mixing bowl and mash with a fork until crumbly.
  5. Add mayonnaise, yellow mustard, pickle juice, salt, pepper, paprika, and garlic powder (if using) to the yolks. Stir until smooth and creamy. Adjust seasoning to taste.
  6. Spoon filling into a piping bag or zip-top bag with a corner snipped off. Pipe filling evenly into each egg white half.
  7. Sprinkle crispy bacon pieces over the filled eggs. Dust with extra paprika and scatter chopped chives or parsley on top. Serve immediately or refrigerate until ready.

Notes

For best results, use eggs that are at least a week old for easier peeling. Add bacon just before serving to keep it crispy. If making ahead, store whites and filling separately and pipe up to 4 hours before serving. For a dairy-free version, use vegan mayo and plant-based bacon.
