  • ⅓ cup unsweetened cocoa powder (35 g)
  • ½ cup unsalted butter (115 g), cut into pieces
  • ½ cup whole milk (120 ml)
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats (270 g)
  • Pinch of salt

Instructions

  1. In a medium saucepan, mix 2 cups granulated sugar, ⅓ cup unsweetened cocoa powder, ½ cup unsalted butter, and ½ cup whole milk. Set heat to medium and stir constantly until butter melts and mixture comes to a rolling boil, about 3-4 minutes. Keep stirring to prevent burning.
  2. Once boiling, let it boil exactly 1 minute. Set a timer to ensure proper setting.
  3. Remove saucepan from heat. Stir in 1 teaspoon vanilla extract and a pinch of salt.
  4. Immediately add 3 cups quick-cooking oats. Stir thoroughly to coat every oat with the chocolate mixture until thick and glossy.
  5. Using a spoon or small ice cream scoop, drop spoonfuls onto a parchment-lined baking sheet. Flatten slightly if desired. Work quickly as mixture sets fast.
  6. Allow cookies to cool at room temperature for 20-30 minutes or until firm. Alternatively, chill in the fridge for 10-15 minutes to speed setting.
