  • 1 cup cooked white rice (leftover rice is perfect here; brown rice works too but add a splash of water)

  • 1/2 cup shredded cheddar cheese (plus more for topping; sharp cheddar gives the best flavor)
  • 1/2 cup diced onion (yellow or white; about half a medium onion)
  • 2 cloves garlic, minced (or 1 tsp garlic powder in a pinch)
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika (adds a subtle smoky depth)
  • Salt and black pepper to taste
  • 4 large orange bell peppers (orange looks most like a pumpkin, but red or yellow work too; look for peppers that sit flat on the bottom)
  • 1 tbsp olive oil (for brushing the peppers before baking)

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). While it’s heating, prep your peppers. Cut the tops off each bell pepper about 1/2 inch from the stem, just like you would a pumpkin. Set the tops asideโ€”you can use them as little ‘hats’ if you want. Scoop out the seeds and membranes with a small spoon. Rinse the peppers inside and out, then pat them dry.
  2. Carve the faces. Using your paring knife, cut jack-o-lantern faces into each pepper. Triangles for eyes, a jagged mouth, maybe a little nose if you’re feeling ambitious. Keep the cuts about 1/2 inch wideโ€”too narrow and they’ll close up during baking. I’ve learned that simple, bold shapes work best. A classic two-triangle-eye and a zigzag mouth takes about 30 seconds per pepper. Don’t overthink it; imperfect faces look charming.
  3. Brown the beef. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until brownedโ€”about 4-5 minutes. You should hear a steady sizzle; if the pan is too quiet, turn up the heat slightly. Drain off any excess fat, leaving about a tablespoon in the pan for flavor. Add the diced onion and cook for another 2 minutes until it’s translucent and fragrant. Add the minced garlic and cook for 30 seconds until you can smell it.
  4. Build the filling. Reduce the heat to low. Stir in the cooked rice, tomato sauce, oregano, smoked paprika, salt, and pepper. Let it simmer for 2 minutes, stirring occasionally. The mixture should look moist but not soupyโ€”if it seems dry, add a tablespoon of water or extra tomato sauce. Remove from heat and stir in 1/2 cup of shredded cheese until it’s melted and gooey. Taste and adjust seasoningโ€”it should be savory with a hint of smokiness.
  5. Stuff the peppers. Spoon the filling into each carved pepper, packing it gently but firmly. Don’t overstuffโ€”leave about 1/4 inch at the top so the filling has room to expand. Place the stuffed peppers in your baking dish. If they wobble, you can trim a tiny slice off the bottom to flatten themโ€”just don’t cut through the face.
  6. Brush and bake. Brush the outside of each pepper with olive oilโ€”this helps them soften and gives them a nice sheen. Top each pepper with a sprinkle of extra cheese. Cover the dish loosely with aluminum foil and bake for 10 minutes. After 10 minutes, remove the foil and bake for another 5-7 minutes until the cheese is bubbly and the peppers are tender but still hold their shape. The peppers should look slightly wrinkled and the edges of the carved faces should be lightly browned.
  7. Rest and serve. Let the peppers rest in the dish for 2-3 minutes before serving. This allows the filling to set slightly so it doesn’t spill out when you cut into them. Transfer to plates and serve warm.

Notes

Do not carve the faces too small; keep cuts at least 1/2 inch wide. Don’t overstuff the peppers; leave about 1/4 inch at the top. Brushing the peppers with olive oil helps them soften evenly. For best results, use a metal spatula to transfer the peppers to plates. You can prep the peppers and filling up to a day ahead.
