  • 1 pound (450g) ground turkey (93% lean recommended)
  • 3 cups (about 300g) broccoli florets, cut into bite-sized pieces
  • 45 cloves garlic, minced
  • 1 tablespoon (15ml) olive oil
  • 3 tablespoons (60ml) honey
  • 3 tablespoons (45ml) low-sodium soy sauce
  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon (5ml) sesame oil (optional)
  • 1 teaspoon (3g) cornstarch mixed with 2 tablespoons (30ml) cold water
  • ½ teaspoon red pepper flakes (optional)
  • 23 green onions, sliced (for garnish)
  • 1 teaspoon sesame seeds (for garnish)

Instructions

  1. Prepare your ingredients: Mince garlic, cut broccoli into bite-sized florets. In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, and red pepper flakes (if using). In another small bowl, mix cornstarch with 2 tablespoons cold water and set aside.
  2. Heat a large skillet over medium-high heat and add olive oil. Once shimmering, add ground turkey. Break into small crumbles and cook undisturbed for 2 minutes to develop a golden-brown crust. Stir and continue cooking until no longer pink, about 4-5 minutes total.
  3. Push cooked turkey to one side of the pan. Add minced garlic to the empty space and cook for 30 seconds until fragrant, stirring constantly. Mix garlic into the turkey.
  4. Add broccoli florets to the pan. Stir and cook for 2 minutes, stirring occasionally, until slightly charred but still bright green. If pan looks dry, add 1 tablespoon water to create steam.
  5. Stir the sauce mixture and pour over turkey and broccoli. Stir to coat. Let simmer for 1 minute, then stir cornstarch slurry and pour in. Sauce will thicken almost immediately, becoming glossy.
  6. Remove from heat. Taste and adjust seasoning if needed. Garnish with sliced green onions and sesame seeds. Serve immediately over rice, quinoa, or on its own.

Notes

For best results, use 93% lean ground turkey. Let turkey develop a crust before stirring. Adjust sweetness to taste. For gluten-free, use tamari or coconut aminos. Leftovers keep in refrigerator for up to 4 days or freeze for up to 3 months.
