Quick Cranberry Brie Bites: Easy Puff Pastry Appetizer

Buttery, flaky puff pastry cups filled with creamy brie and sweet-tart cranberry sauce, topped with fresh rosemary. Ready in under 25 minutes with only 5 ingredients, these crowd-pleasing bites are perfect for parties and holiday gatherings.

  • 1 package (17.3 ounces) frozen puff pastry sheets, thawed
  • 8 ounces brie cheese, rind removed and cut into 1/2-inch cubes
  • 1/2 cup whole berry cranberry sauce
  • 1 large egg, beaten
  • 2 tablespoons fresh rosemary, finely chopped
  • Flaky sea salt, for finishing
  • Optional: honey or balsamic glaze for drizzling
  • Optional: chopped pecans or walnuts
  • Optional: fresh thyme sprigs for garnish

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Position the rack in the middle. Spray your mini muffin tin with baking spray, making sure to get the sides. Set it aside.
  2. Take the brie out of the fridge about 15 minutes before you start. Use a small sharp knife to trim off the white rind. Cut the brie into small cubes, about 1/2 inch each. Set them aside on a plate.
  3. Lightly flour your work surface. Unfold one sheet of thawed puff pastry and gently roll it out just slightlyโ€”you want it about 1/8 inch thick. Don’t overwork it.
  4. Using a 2-inch biscuit cutter or a sharp knife, cut out as many rounds as you can from the first sheet (about 15-18 per sheet). Gather the scraps, gently press them together, and reroll to cut more rounds.
  5. Gently press each round into a mini muffin cup. Don’t stretch the pastryโ€”just let it settle naturally. The edges should come up slightly above the rim of the cup.
  6. Place one cube of brie into each pastry cup.
  7. Spoon about 1/2 teaspoon of cranberry sauce on top of each brie cube.
  8. Using a pastry brush, lightly brush the exposed edges of the pastry with the beaten egg.
  9. Sprinkle a pinch of chopped rosemary over each bite.
  10. Bake for 12-14 minutes until the pastry is puffed and golden brown and the brie is melted and bubbly.
  11. Let them rest in the muffin tin for exactly 2 minutes. Then use a small spoon or offset spatula to gently lift them out and transfer to a wire rack or serving platter.
  12. Sprinkle a tiny pinch of flaky sea salt over each warm bite. Serve warm.

Notes

Assemble up to 8 hours ahead and refrigerate; add 2 minutes to baking time if baking from fridge. Keep puff pastry cold for best flakiness. Let bites rest 2 minutes in pan before removing. Serve within 30 minutes of baking.
