  • 2 teaspoons baking powder
  • ยฝ teaspoon baking soda
  • ยผ teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 cups (480 ml) buttermilk, preferably full-fat
  • 2 large eggs, room temperature
  • ยผ cup (56 g) unsalted butter, melted and slightly cooled
  • 1 teaspoon pure vanilla extract
  • 1 pint (about 300 g) fresh strawberries, hulled and sliced
  • Powdered sugar, for dusting (optional)
  • Maple syrup or honey, as desired for drizzling

Instructions

  1. Preheat your waffle iron (about 5 minutes) until the indicator light shows it’s ready.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and granulated sugar.
  3. In a separate medium bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold with a spatula or wooden spoon until just combined; batter should be slightly lumpy.
  5. Lightly grease the waffle iron with butter or cooking spray. Pour about ยฝ cup (120 ml) of batter onto the center of the iron and spread slightly if needed.
  6. Close the lid and cook for 3-5 minutes until steam stops rising and waffles are golden brown.
  7. Remove waffles and keep warm on a wire rack or in a warm oven (around 200ยฐF / 90ยฐC). Repeat with remaining batter, re-greasing as needed.
  8. While waffles cook, hull and slice the strawberries. Optionally sprinkle with a little sugar to macerate.
  9. Serve waffles stacked, topped generously with fresh strawberries, dusted with powdered sugar if desired, and drizzled with maple syrup or honey.

Notes

Do not overmix the batter to keep waffles tender. Let melted butter cool before mixing with eggs to avoid scrambling. Wait until steam stops escaping before opening waffle iron to prevent sticking. For extra crispiness, add 1 teaspoon cornstarch to dry ingredients. Batter can be made ahead and refrigerated overnight for richer flavor.
