Perfect Mom’s Homemade Birthday Cake with Creamy Buttercream Frosting

  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup (240ml) whole milk, room temperature
  • For the Frosting:
  • 1 cup (226g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 2 teaspoons pure vanilla extract
  • 23 tablespoons heavy cream or milk
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and line bottoms with parchment paper.
  2. In a medium bowl, sift together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar on medium speed until light and fluffy, about 4-5 minutes.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Reduce mixer speed to low. Add flour mixture in three parts, alternating with milk in two parts, starting and ending with flour. Mix just until combined.
  6. Divide batter evenly between prepared pans. Smooth tops gently with a spatula.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cakes cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. For the frosting, beat softened butter on medium speed until creamy, about 2 minutes.
  10. Gradually add powdered sugar, one cup at a time, mixing on low speed.
  11. Add vanilla extract, salt, and 2 tablespoons of cream. Beat on high for 3-4 minutes until light and fluffy. Add extra cream if needed for consistency.
  12. Place one cake layer on serving plate. Spread a generous amount of frosting on top.
  13. Add second layer and cover entire cake with remaining frosting using an offset spatula. Decorate as desired.

Notes

Use room temperature butter and eggs for best results. Chill frosting if too soft before spreading. Line pans with parchment paper for easy removal. Avoid overmixing batter to keep cake tender. For variations, try gluten-free flour, add cocoa powder for chocolate twist, or use dairy-free substitutes.
