This perfect maple roasted delicata squash is a quick and easy side dish that’s elegant enough for Thanksgiving and casual enough for a weeknight dinner. With caramelized edges and a tender interior, it’s made with just five simple ingredients and ready in under 30 minutes.

  • 2 medium delicata squash (about 1.5 pounds total)
  • 2 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt (use ½ teaspoon if using table salt)
  • ½ teaspoon freshly ground black pepper
  • Optional garnish: fresh thyme sprigs, flaky sea salt, or ¼ teaspoon cinnamon

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash the delicata squash thoroughly. Cut off both ends, slice in half lengthwise, and scoop out the seeds and stringy bits with a spoon.
  3. Place each half cut-side down and slice crosswise into ½-inch thick half-moons, keeping pieces uniform for even cooking.
  4. In a mixing bowl, combine the squash slices with olive oil, salt, and pepper. Toss with your hands until each piece is coated.
  5. Spread the squash in a single layer on the prepared baking sheet, giving them space to roast rather than steam.
  6. Roast for 15 minutes on the middle rack until the bottom edges start to brown.
  7. Remove the pan from the oven. Drizzle the maple syrup evenly over the squash, gently toss with a spatula, and spread back into a single layer.
  8. Return to the oven and roast for another 10-15 minutes, until the edges are deep golden brown and caramelized, and the flesh is tender when pierced with a fork.
  9. Let the squash rest on the pan for 2-3 minutes. Transfer to a serving platter, garnish as desired, and serve warm.

Notes

For best results, add maple syrup halfway through roasting to prevent burning. Cut squash pieces uniformly for even cooking. Avoid overcrowding the pan to ensure caramelization. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days; reheat in a 400°F oven for 5-7 minutes. Not recommended for freezing.
