  • 1 teaspoon baking soda
  • ยฝ teaspoon baking powder
  • ยฝ teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 1 ยฝ cups (300g) granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 3 tablespoons (45ml) whole milk or dairy-free milk like almond milk
  • 1 cup (230g) unsalted butter, softened (for frosting)
  • 4 cups (480g) powdered sugar, sifted
  • 2 teaspoons vanilla extract (for frosting)
  • 24 tablespoons (30-60ml) heavy cream or milk (for frosting)
  • Gel food coloring in dark blue, purple, black, and white
  • Edible glitter or star-shaped sprinkles

Instructions

  1. Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  2. Cream butter and sugar: Beat softened butter with granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add egg and vanilla: Beat in egg and vanilla extract until combined.
  4. Combine wet and dry: Gradually add dry ingredients to butter mixture, alternating with milk, starting and ending with dry ingredients. Mix until just combined.
  5. Chill dough: Divide dough in half, wrap in plastic wrap, and chill for at least 1 hour.
  6. Preheat oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper.
  7. Roll and cut: Lightly flour surface and rolling pin. Roll dough to ยผ inch thickness. Cut shapes with cookie cutters and place on baking sheets about 1 inch apart.
  8. Bake: Bake for 8-10 minutes until edges just start turning golden. Let cool on sheets for 5 minutes, then transfer to wire racks to cool completely.
  9. Make frosting: Beat softened butter until creamy. Gradually add powdered sugar, alternating with cream, until spreadable. Stir in vanilla extract.
  10. Color frosting: Divide frosting into 4 bowls. Tint each with gel colors: dark blue, purple, black, and leave one white.
  11. Create galaxy effect: Dollop small amounts of each color side-by-side on a plate or bowl. Swirl lightly with toothpick or knife to marble. Spread swirled frosting onto cookies with a spatula. Add edible glitter or star sprinkles while frosting is wet.
  12. Set and serve: Let cookies sit about 30 minutes for frosting to firm up before serving or packing.

Notes

Chill dough for at least 1 hour to prevent spreading and make rolling easier. Use gel food coloring for vibrant frosting without thinning. Lightly swirl frosting colors to avoid muddy colors. Let frosting set before stacking or packing cookies. For dairy-free version, use coconut oil or vegan butter and plant-based milk. Freeze unfrosted cookies for up to 3 months; frost after thawing.
