This Quick Herb Butter Roasted Turkey Breast delivers all the juicy, aromatic flavor of a holiday roast in a fraction of the time and with a fraction of the fuss. It’s the weeknight warrior you didn’t know you needed.

  • 1 (3-4 lb) bone-in, skin-on turkey breast
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh sage, finely chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 small onion, quartered
  • ½ cup chicken broth or water

Instructions

  1. Preheat your oven to 400°F (200°C). Take the turkey breast out of the fridge and let it sit on the counter for about 20 minutes.
  2. In a small bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, sage, salt, and pepper. Mix until a uniform paste forms.
  3. Pat the turkey breast completely dry with paper towels.
  4. Gently slide your fingers between the skin and the meat of the turkey breast to create a pocket, being careful not to tear the skin.
  5. Take about two-thirds of the herb butter and push it under the skin, spreading it evenly over the meat. Rub the remaining one-third of the herb butter all over the outside of the skin.
  6. Place the quartered onion in the center of your roasting pan or baking dish. Place the herb-buttered turkey breast on top of the onions. Pour the chicken broth or water into the bottom of the pan.
  7. Roast for 50-60 minutes, or until the internal temperature of the thickest part of the breast reaches 155°F (68°C). Start checking at the 45-minute mark.
  8. Remove the pan from the oven. Transfer the turkey breast to a cutting board and tent it loosely with aluminum foil. Let it rest for at least 15 minutes.
  9. After resting, carve against the grain and serve with the pan juices, if desired.

Notes

If the skin is browning too quickly before the internal temperature is reached, loosely tent the turkey breast with foil for the last 15-20 minutes of cooking. Letting the turkey rest for at least 15 minutes is non-negotiable for juicy meat.
