  • 8 oz cream cheese, softened
  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon juice
  • Salt and freshly ground black pepper, to taste
  • 1 large English cucumber, thinly sliced
  • 1 teaspoon salt
  • 12 slices white sandwich bread, crusts removed

Instructions

  1. Thinly slice the English cucumber using a mandoline or sharp knife. Place slices in a colander and sprinkle with 1 teaspoon of salt. Let sit for 10 minutes to draw out excess water. Gently pat dry with paper towels.
  2. In a mixing bowl, combine softened cream cheese, chopped chives, dill, parsley, and lemon juice. Whip with an electric mixer on medium speed for 2-3 minutes until light and fluffy. Season with salt and freshly ground black pepper to taste.
  3. Lay out bread slices and gently remove crusts using a serrated knife. If bread is stale, lightly spritz with water or wrap in a damp towel for 5 minutes to soften.
  4. Spread a generous layer of whipped herb cream cheese evenly over each bread slice. Arrange cucumber slices in a single layer on half of the bread slices, overlapping slightly but not overcrowding. Top with remaining bread slices, cream cheese side down.
  5. Cut each sandwich into 3 or 4 finger-sized rectangles. Optionally trim edges for neat rectangles.
  6. Place sandwiches on a tray, cover with a clean kitchen towel or plastic wrap, and chill in the fridge for at least 20 minutes before serving.

Notes

Salt and dry cucumber slices to prevent soggy bread. Whip cream cheese until fluffy for best texture. Chill sandwiches before serving to meld flavors and improve handling. For gluten-free, use gluten-free bread; for dairy-free, use plant-based cream cheese alternatives.
