This Perfect Cranberry Pistachio Baked Brie is the kind of recipe that makes you look like a hero with almost no effort. It’s fancy enough for holiday parties, but simple enough for a random Tuesday when you want something special.

  • 1 (8-ounce) wheel of brie cheese
  • 1/3 cup dried cranberries
  • 1/3 cup shelled pistachios, roughly chopped
  • 2 tablespoons honey
  • 1 tablespoon fresh rosemary, finely chopped (optional)
  • 1 sheet frozen puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • Flaky sea salt, for finishing

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Take the brie out of the refrigerator about 15 minutes before starting. Using a sharp knife, carefully cut off the top rind of the brie, leaving the sides and bottom intact.
  3. In a small bowl, combine the dried cranberries, chopped pistachios, and fresh rosemary if using. Stir to distribute evenly.
  4. Place the brie on the prepared baking sheet. Spoon about half of the cranberry-pistachio mixture on top of the brie, pressing gently into the cut surface. Drizzle with about 1 tablespoon of honey.
  5. On a lightly floured surface, roll out the thawed puff pastry sheet slightly to smooth out the creases. Place the brie in the center of the pastry, cut side up. Gently fold the pastry up and over the brie, pleating as needed to cover completely. Pinch the seams to seal.
  6. Brush the entire pastry with the beaten egg wash. Score the top with a few small slits to allow steam to escape. Sprinkle with a pinch of flaky sea salt.
  7. Bake for 20-25 minutes, until the pastry is golden brown and puffed up. If the pastry browns too quickly, tent loosely with foil for the last 5 minutes.
  8. Let the baked brie rest for 5-10 minutes before serving. Transfer to a serving platter, drizzle with the remaining honey, and top with the reserved cranberry-pistachio mixture.

Notes

You can assemble the entire dish up to 24 hours in advance. Wrap tightly in plastic wrap and refrigerate. When ready to bake, brush with egg wash and add about 5 minutes to the baking time. For a gluten-free version, skip the puff pastry and bake the brie with toppings at 350°F for about 15 minutes.
