A quick and refreshing 3-ingredient slushie made without a blender, perfect for hot days and easy to prepare in under 10 minutes.

Ingredients

Scale
  • 4 cups fresh watermelon, cubed (seedless if possible)
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 23 tablespoons sugar or honey, adjust to taste
  • Optional: pinch of salt

Instructions

  1. Cube about 4 cups (600 g) of watermelon into small chunks.
  2. Transfer the cubes to a large mixing bowl and mash with a fork or potato masher until mostly liquid with some pulp remains.
  3. Optional: Strain the mashed watermelon through a fine mesh strainer for a smoother texture.
  4. Stir in 1/2 cup (120 ml) fresh lemon juice and 2-3 tablespoons sugar or honey until dissolved. Adjust sweetness to taste.
  5. Pour the mixture into a shallow container and place in the freezer.
  6. Every 20 minutes, stir vigorously with a fork to break up ice crystals and create a slush texture. Repeat 3-4 times over about 1 hour.
  7. Once the slush consistency is achieved, scoop into glasses and serve immediately. Garnish with lemon slices or mint if desired.

Notes

Stir the mixture every 20 minutes during freezing to achieve the perfect slush texture. Avoid leaving it too long without stirring to prevent freezing solid. Fresh lemon juice is preferred for best flavor. Frozen watermelon chunks can be used if fresh is unavailable, thaw slightly before mashing. Adjust sweetness to taste and consider adding a pinch of salt to balance flavors.
