  • ½ cup (50 g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) brown sugar
  • ⅓ cup (80 ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 medium zucchinis (about 2 cups shredded), unpeeled, freshly grated
  • 1 cup (175 g) semi-sweet or dark chocolate chips
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, and line it with parchment paper if desired.
  2. Shred the zucchini using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel and squeeze gently to remove some excess moisture, leaving about 2 cups (200 g).
  3. In a large bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Stir in granulated sugar and brown sugar until combined.
  4. In a separate bowl, whisk the eggs, vegetable oil, and vanilla extract until smooth. Gently fold in the shredded zucchini.
  5. Pour the wet mixture into the dry ingredients. Stir gently with a spatula until just combined. Fold in the chocolate chips and nuts if using.
  6. Transfer the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. Let the bread cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.

Notes

Squeeze excess moisture from shredded zucchini to avoid soggy bread. Mix batter gently to prevent toughness. Use room temperature eggs for better rise. Tent with foil if top browns too quickly. Semi-sweet or dark chocolate chips work best; avoid mini chips.
