  • 1 cup (170g) semisweet or dark chocolate chips
  • Optional: ยฝ cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.
  2. Wash and trim zucchinis. Shred finely using a box grater. Place shredded zucchini in a clean kitchen towel and squeeze out excess moisture. Set aside.
  3. In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  4. In a separate bowl, cream softened butter with granulated sugar and brown sugar until light and fluffy, about 2-3 minutes.
  5. Beat in eggs one at a time, then add vanilla extract. Mix until combined but do not overmix.
  6. Gradually add dry ingredients to wet mixture, stirring gently with a spatula until just combined.
  7. Fold in shredded zucchini, chocolate chips, and nuts if using.
  8. Pour batter into prepared loaf pan and smooth the top.
  9. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  10. Let bread cool in pan on a wire rack for 15 minutes, then remove from pan and cool completely (about 45 minutes).
  11. To make glaze, melt butter in a small saucepan over medium heat until golden brown and nutty (4-5 minutes). Remove from heat and whisk in powdered sugar and milk until smooth.
  12. Drizzle glaze over cooled bread and let set for 10 minutes before slicing.

Squeeze excess moisture from shredded zucchini to avoid soggy bread. Brown the butter carefully for a nutty flavor without burning. Avoid overmixing the batter to keep the bread tender.
