A quick and easy charcuterie board featuring crisp apples, pear slices, sharp cheddar, brie, and a honey drizzle. Perfect for Thanksgiving appetizers, it’s light enough to not weigh guests down before the main meal.

Ingredients

  • Sharp cheddar cheese, sliced into thin wedges
  • Brie cheese, at room temperature
  • Apple (Honeycrisp or Gala), thinly sliced
  • Pear (Bosc or Bartlett), thinly sliced
  • Dried figs, halved
  • Red grapes, small clusters
  • Honey, for drizzling
  • Walnuts, toasted
  • Almonds, raw or roasted
  • Whole-grain crackers
  • Fresh rosemary sprigs, for garnish (optional)

Instructions

  1. Toast the walnuts: Heat a small skillet over medium heat. Add ½ cup walnuts and stir constantly for 2-3 minutes until fragrant and slightly darker. Set aside to cool.
  2. Prepare the fruit: Wash and dry the apples, pears, and grapes. Core the apple and pear, then slice into thin wedges (about ¼ inch thick). Halve the dried figs. If making ahead, toss apple and pear slices with 1 teaspoon lemon juice to prevent browning.
  3. Slice the cheese: Cut sharp cheddar into thin triangles or rectangles. For brie, leave whole or cut into wedges. Let brie sit at room temperature for 15 minutes before serving.
  4. Arrange the board: Place a large board on the counter. Put cheddar on one side and brie on the other. Add small bowls for honey and walnuts in the middle or corners. Fill gaps with apple slices, pear slices, grape clusters, and dried figs. Scatter toasted almonds and walnuts around. Place crackers in remaining spaces, fanning them out.
  5. Drizzle and garnish: Drizzle honey over the brie and some fruit. Tuck fresh rosemary sprigs around the board. Serve immediately or cover with plastic wrap and refrigerate for up to 2 hours (add crackers and honey just before serving).

Notes

Slice fruit no more than an hour before serving to prevent browning. Let cheese come to room temperature for best flavor. Toast nuts in small batches to avoid burning. Balance flavors and textures by placing soft and crunchy items next to each other. Estimate 3-4 ounces of cheese and 1-2 ounces of nuts per person.
