A healthier twist on the classic Halloween appetizer, featuring lean chicken or turkey sausages wrapped in light puff pastry with tangy mustard eyes. Quick, easy, and perfect for parties.

  • 1 package (12-14 oz) lean chicken or turkey cocktail sausages
  • 1 sheet (about 8 oz) light puff pastry or thin-crust pizza dough
  • 1 large egg
  • 1 tablespoon water
  • 2 tablespoons yellow mustard
  • 1 teaspoon honey or maple syrup (optional)
  • 1/4 teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the dough: If using puff pastry, thaw in fridge overnight or on counter for 30 minutes. Roll out on a lightly floured surface to about 1/8-inch thickness. If using pizza dough, stretch into a thin rectangle about 10×12 inches.
  3. Cut the dough into long, thin strips about 1/2-inch wide. You’ll need about 3-4 strips per sausage.
  4. Wrap the sausages: Take one strip of dough and wrap it around a sausage, starting at one end and working to the other. Leave a small gap at the top for the face. The dough should overlap slightly but not be too tight.
  5. Place wrapped sausages on the prepared baking sheet, leaving about 1 inch of space between each.
  6. Make the egg wash: In a small bowl, whisk together the egg and 1 tablespoon water until smooth. Brush the tops of the mummies lightly with the egg wash.
  7. Bake for 12-15 minutes, until golden brown and puffed. If browning too quickly, tent loosely with foil.
  8. While baking, make the mustard eyes: Mix yellow mustard, honey (if using), and smoked paprika in a small bowl. Transfer to a small piping bag or zip-top bag with corner snipped off.
  9. Let mummies cool for about 5 minutes on the baking sheet. Pipe two small dots on the exposed end of each sausage to create eyes.
  10. Serve immediately. Best enjoyed warm.

Notes

For best results, keep dough cold and don’t overwork it. Leave a clear gap at the top for the eyes. Let mummies cool before adding mustard eyes to prevent sliding. Can be assembled a day in advance and refrigerated.
