Lighter Classic Meatloaf with Easy Ketchup Glaze

A tender, juicy meatloaf made with lean ground turkey or beef, topped with a sweet and tangy ketchup brown sugar glaze. This lighter version delivers all the comfort without the heaviness, perfect for a busy weeknight dinner.

  • 1 pound lean ground turkey (93/7) or extra-lean ground beef (90/10)
  • ½ cup whole wheat breadcrumbs
  • ¼ cup milk (any kind)
  • 1 large egg, lightly beaten
  • ½ cup yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • ½ cup ketchup
  • 2 tablespoons brown sugar, packed
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon Worcestershire sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center. Line your loaf pan with parchment paper if using, or lightly spray it with non-stick cooking spray.
  2. Make the panade: In your large mixing bowl, combine the breadcrumbs and milk. Let it sit for 5 minutes until the breadcrumbs absorb the liquid.
  3. Add the aromatics and seasonings: To the panade, add the beaten egg, finely diced onion, minced garlic, Worcestershire sauce, Dijon mustard, dried thyme, salt, and black pepper. Stir until evenly combined.
  4. Add the meat: Add the ground turkey or beef to the bowl. Use your hands to gently mix everything together until just combined, about 30 seconds. Do not overmix.
  5. Shape the loaf: Transfer the meat mixture to the prepared loaf pan. Gently press it into an even shape, avoiding air pockets. Do not pack too firmly.
  6. Make the glaze: In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and Worcestershire sauce until the sugar is mostly dissolved.
  7. Apply the first layer of glaze: Spread about half of the glaze evenly over the top of the meatloaf. Reserve the rest.
  8. Bake for 45 minutes: Place the loaf pan on a baking sheet and bake uncovered.
  9. Apply the second layer of glaze: After 45 minutes, remove the pan from the oven and spread the remaining glaze over the top.
  10. Continue baking: Return to the oven and bake for another 15 to 20 minutes, until the internal temperature reaches 165°F (74°C) for turkey or 160°F (71°C) for beef.
  11. Rest the meatloaf: Remove from the oven and let it rest in the pan for 10 to 15 minutes.
  12. Slice and serve: Lift the meatloaf out of the pan, transfer to a cutting board, and slice into 8 even pieces. Spoon any juices from the pan over the slices.

Notes

Don’t skip the panade (breadcrumbs and milk mixture) as it keeps the meatloaf moist. Use a light hand when mixing to avoid a dense texture. Let the meatloaf rest for 10-15 minutes after baking to allow juices to redistribute. For best results, use a meat thermometer to check doneness rather than relying solely on time.
