  • 2 medium acorn squash (about 2–2.5 pounds total)
  • 1 large yellow onion, roughly chopped
  • 4–5 garlic cloves, smashed
  • 4 cups vegetable broth (low-sodium preferred)
  • 3 tablespoons maple syrup (Grade A dark amber), plus more for drizzling
  • 2 tablespoons unsalted butter
  • 1 teaspoon ground cinnamon
  • ยผ teaspoon ground nutmeg
  • ยฝ teaspoon ground ginger
  • 1 teaspoon fine sea salt, plus more to taste
  • ยผ teaspoon freshly ground black pepper
  • ยฝ cup heavy cream or full-fat coconut milk (optional)
  • Optional toppings: toasted pumpkin seeds, extra maple syrup, cream swirl, fresh thyme leaves, crumbled bacon

Instructions

  1. Prep the acorn squash: Carefully cut each acorn squash in half from stem to tip using a sharp chef’s knife. Scoop out seeds and stringy pulp with a spoon or ice cream scoop. Do not rinse.
  2. Layer the aromatics: Place the roughly chopped onion and smashed garlic cloves in the bottom of a 5-6 quart slow cooker, spreading them evenly.
  3. Add the squash: Place the acorn squash halves cut-side down on top of the onions and garlic.
  4. Pour in the broth: Carefully pour the vegetable broth around the squash halves, not directly on top, so the liquid comes about halfway up the sides.
  5. Add the butter and maple: Dot the butter pieces around the broth, then drizzle the maple syrup over everything. Do not stir.
  6. Season and cook: Sprinkle cinnamon, nutmeg, ginger, salt, and pepper over the top. Cover and cook on LOW for 5-6 hours or on HIGH for 3-4 hours, until the squash is fork-tender.
  7. Remove the squash: Using tongs or a large spoon, carefully transfer the cooked squash halves to a cutting board. Let cool for 5 minutes.
  8. Scoop out the flesh: Once cool enough to handle, scoop the flesh away from the skin using a spoon. Discard the skins. You should have about 3-4 cups of cooked squash.
  9. Blend it all together: Return the squash flesh to the slow cooker with the broth and aromatics. Use an immersion blender to puree until smooth. If using a regular blender, work in batches, filling no more than halfway, and hold the lid firmly with a towel.
  10. Finish and adjust: If using, stir in the heavy cream or coconut milk. Taste and adjust seasoning with more salt, cinnamon, or maple syrup as desired. Thin with extra broth or water if needed.
  11. Serve warm: Ladle into bowls and add desired toppings like a swirl of cream, drizzle of maple syrup, toasted pumpkin seeds, and fresh thyme.

Notes

For a vegan version, swap butter for coconut oil or vegan butter and use full-fat coconut milk instead of heavy cream. For a spicy twist, add ยผ teaspoon cayenne pepper. The soup tastes even better the next day as flavors meld. To freeze, leave out the cream and add after reheating. If using a regular blender for hot soup, work in small batches and hold the lid down with a towel to prevent accidents.
