Instructions

  1. Soften the cream cheese: Take 8 ounces of cream cheese out of the fridge at least 30 minutes before starting. If forgotten, unwrap, cut into cubes, and microwave on 50% power for 15-second intervals until soft but not melted.
  2. Beat the cream cheese: Place softened cream cheese in a medium mixing bowl. Beat with an electric mixer on medium speed for about 2 minutes until completely smooth and fluffy. Scrape down sides of bowl halfway through.
  3. Add the sweeteners: Pour in 1/2 cup caramel sauce, 1/4 cup powdered sugar, and 1 teaspoon vanilla extract. Beat on low speed until combined, then increase to medium and beat for another minute until smooth, pale, and slightly thick.
  4. Fold in the toffee bits: Turn off mixer and add 1/4 cup of the toffee bits (save rest for topping). Fold gently with a spatula until evenly distributed.
  5. Transfer to serving dish: Scrape dip into serving bowl or pie plate and spread into an even layer.
  6. Add the toppings: Drizzle remaining 2 tablespoons caramel sauce over top. Sprinkle with remaining 1/4 cup toffee bits. If using nuts, scatter over. Finish with a tiny pinch of flaky sea salt.
  7. Chill (optional but recommended): Refrigerate for 15-20 minutes before serving to help dip set.
  8. Prepare the apples: While dip chills, slice apples (leave skin on). Core and cut into wedges about 1/2-inch thick. Toss in lemon water (1 tablespoon lemon juice mixed with 1 cup water) for 30 seconds, then drain.
  9. Serve: Arrange apple slices around dip on a large platter. Provide small plates and napkins.

Notes

Use full-fat cream cheese for best texture. Let cream cheese soften completely (30-40 minutes at room temperature) to avoid lumps. Do not overmix after adding toffee bits to preserve crunch.
