Instructions

  1. Preheat your oven to 350°F (175°C) and grease your muffin tin well.
  2. In a large mixing bowl, whisk together the wet ingredients: pumpkin puree, eggs, maple syrup, almond milk, melted coconut oil, and vanilla extract until smooth.
  3. In a separate medium bowl, combine the dry ingredients: rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt. Stir with a fork to distribute the spices evenly.
  4. Pour the dry ingredients into the wet ingredients and stir until just combined. Do not overmix. If adding mix-ins, fold them in now.
  5. Let the batter rest for 5 minutes to allow the oats to absorb the liquid.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes, or until the tops are set and a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
