A quick and easy cranberry sauce infused with rosemary and bright citrus, perfect for holiday gatherings. This crowd-pleaser balances tart, sweet, and herbaceous flavors in under 25 minutes.

Ingredients

  • 12 oz (340 g) fresh cranberries
  • ¾ cup (150 g) granulated sugar
  • ½ cup (120 ml) fresh orange juice
  • 1 tablespoon orange zest
  • 1 large sprig fresh rosemary (about 4 inches / 10 cm)
  • ¼ cup (60 ml) water
  • Pinch of salt

Instructions

  1. Wash the orange thoroughly. Zest to get 1 tablespoon of zest, then juice to get ½ cup of juice. Strain juice to remove seeds.
  2. In a medium saucepan, combine sugar, orange juice, water, and the whole rosemary sprig. Place over medium heat and stir until sugar dissolves (2-3 minutes).
  3. Bring the mixture to a gentle simmer and let it simmer for 3 minutes to infuse the rosemary flavor.
  4. Add the fresh cranberries to the pot and stir. Increase heat to medium-high and bring to a boil.
  5. Reduce heat to medium-low and simmer for 10-12 minutes, stirring occasionally. Gently press some cranberries against the side of the pan around the 8-minute mark to release pectin.
  6. Test for doneness: the sauce should coat the back of a spoon and leave a clean trail when you run your finger through it. If too runny, cook 2-3 more minutes.
  7. Remove the pan from heat. Use tongs or a fork to remove the rosemary sprig. Stir in the orange zest and pinch of salt.
  8. Let the sauce cool in the pan for 10 minutes, then transfer to a serving bowl or jar. Serve warm, at room temperature, or cold.

Notes

For best flavor, make a day ahead to let flavors meld. The sauce thickens as it cools. For a spiced version, add a cinnamon stick and two star anise to the syrup. For a maple version, swap half the sugar for maple syrup. For a bourbon-infused version, stir in 2 tablespoons of bourbon after removing the rosemary.
