Fresh Watermelon Feta Mint Skewers

A quick and easy summer appetizer combining juicy watermelon, tangy feta, and fresh mint, finished with a drizzle of balsamic glaze for a refreshing and flavorful bite.

Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Good-quality block feta cheese, cut into cubes
  • Fresh mint leaves, whole
  • Extra virgin olive oil, for drizzling
  • Balsamic glaze (optional)
  • Sea salt, a pinch
  • Freshly cracked black pepper, to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. Cut off the rind and slice the watermelon into roughly 1-inch cubes.
  2. Slice feta into cubes approximately the same size as the watermelon.
  3. Gently pluck whole mint leaves from the stems, wash and pat dry.
  4. Thread watermelon cube, then a mint leaf folded in half, followed by a feta cube on each skewer. Repeat until the skewer is full (3-4 sets per stick).
  5. Lay the skewers on a serving platter. Sprinkle lightly with sea salt and cracked black pepper.
  6. Drizzle with extra virgin olive oil and a few thin lines of balsamic glaze (optional).
  7. Chill for 15-20 minutes before serving or serve immediately.

Notes

Soak wooden skewers for 30 minutes before use to prevent burning if grilling. For a smoky flavor, grill watermelon cubes briefly before assembling. Add balsamic glaze just before serving to avoid sogginess. Use firm, seedless watermelon for best texture. Mint leaves should be folded gently to preserve flavor without overpowering.
