  • 1 cup sliced strawberries (hulled and halved)
  • 1 kiwi, peeled and thinly sliced
  • 1/2 cup seedless red grapes, halved
  • Fresh mint leaves for garnish
  • Optional: chopped nuts like pistachios or almonds
  • Optional: shredded coconut
  • Optional: lime zest

Instructions

  1. Rinse the watermelon and pat dry. Slice off both ends to create stable flat surfaces. Cut a 1-inch thick round slice from the middle of the watermelon to serve as the pizza crust. Trim edges if desired.
  2. In a medium bowl, combine Greek yogurt, honey, and vanilla extract. Stir until smooth and creamy. Adjust sweetness if needed.
  3. Place the watermelon slice on a serving platter. Spread the Greek yogurt frosting evenly over the surface, leaving about a half-inch border around the edge.
  4. Arrange fresh fruit toppings on top of the yogurt layer, starting with blueberries near the edge, then strawberries, kiwi, and grapes toward the center. Garnish with fresh mint leaves.
  5. If desired, sprinkle chopped nuts or shredded coconut and zest lime over the top.
  6. Serve immediately or chill covered loosely with plastic wrap. Add mint and nuts just before serving if prepared ahead.
