Instructions

  1. Prepare the chicken: shred cooked chicken finely if not already shredded. If using raw chicken, cook thoroughly by poaching or baking, then shred once cool (about 10 minutes).
  2. Mash the avocados: scoop the flesh of 2 ripe avocados into a medium mixing bowl and mash with a fork or potato masher until creamy but still slightly chunky.
  3. Add flavor: stir in 1 tablespoon fresh lime juice, 1/2 teaspoon garlic powder, salt, and pepper to taste.
  4. Combine chicken and avocado: gently fold shredded chicken into the mashed avocado until evenly coated. Fold in optional diced red onion or jalapeño slices if desired. Taste and adjust seasoning.
  5. Prep the lettuce: separate 8 large butter lettuce leaves, rinse, and pat dry.
  6. Assemble the wraps: spoon the avocado-chicken mixture evenly into each lettuce leaf.
  7. Drizzle with ranch: finish each wrap with a generous drizzle of ranch dressing (1/4 cup total).
