A quick and easy fresh peach salsa with a honey-lime drizzle that balances sweetness and tang, perfect for summer gatherings or as a light appetizer.

  • 3 medium fresh peaches, peeled and diced
  • 1/4 cup red onion, finely chopped
  • 1 small jalapeño, seeded and minced
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 1 tablespoon honey
  • 1/2 teaspoon salt, or to taste
  • Pinch of freshly ground black pepper
  • Optional: 1 small garlic clove, minced
  • Optional: 1 small cucumber, seeded and diced
  • Optional: 1 teaspoon apple cider vinegar

Instructions

  1. Peel the peaches by blanching them in boiling water for 30 seconds, then plunging into ice water to loosen the skin. Dice into 1/2-inch cubes. This takes about 10 minutes.
  2. Finely dice 1/4 cup red onion and mince the jalapeño. Remove seeds for less heat. Chop 2 tablespoons fresh cilantro. This takes about 5 minutes.
  3. In a medium bowl, combine diced peaches, onion, jalapeño, and cilantro. Add 1/2 teaspoon salt and a pinch of black pepper. Gently toss to mix without mashing the peaches.
  4. In a small bowl, whisk together juice of 2 limes (about 3 tablespoons) and 1 tablespoon honey until fully combined.
  5. Pour the honey-lime drizzle over the peach mixture. Toss gently to coat evenly. Cover and refrigerate for at least 20 minutes to let flavors meld (minimum 10 minutes if short on time).
  6. Before serving, taste and adjust salt, lime, or honey as needed. If too sweet, add more lime juice.

Notes

Avoid over-mixing to keep peaches intact. Chill salsa to let flavors meld. If watery after chilling, drain excess liquid before serving. For vegan version, substitute honey with maple syrup or agave nectar. Peeling peaches by blanching makes it easier but can be skipped. Adjust jalapeño seeds to control heat.
