A fresh and vibrant cowboy caviar salad featuring black beans, sweet corn, cherry tomatoes, and a zesty cilantro-lime dressing. Perfect as a snack, side, or topping for grilled meats.

  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 can (15 oz / 425 g) sweet corn, drained
  • 1 cup (150 g) cherry tomatoes, quartered
  • 1/2 cup (75 g) red bell pepper, diced
  • 1/4 cup (40 g) red onion, finely chopped
  • 1/2 cup (30 g) fresh cilantro, chopped
  • 1 avocado, diced (optional)
  • 1/4 cup (60 ml) fresh lime juice (about 2 limes)
  • 1/4 cup (60 ml) olive oil (extra virgin)
  • 1 clove garlic, minced
  • 1 tablespoon honey or agave
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper to taste

Instructions

  1. Rinse and drain the black beans and corn thoroughly. Quarter the cherry tomatoes, dice the red bell pepper and onion, and chop the cilantro. Dice the avocado last if using.
  2. In a small bowl or jar, combine fresh lime juice, olive oil, minced garlic, honey, ground cumin, salt, and pepper. Whisk or shake until well emulsified.
  3. In a large bowl, gently toss together black beans, corn, tomatoes, bell pepper, onion, and cilantro. Fold in avocado carefully if using.
  4. Pour the dressing over the mixture and toss until evenly coated.
  5. Chill in the refrigerator for at least 15 minutes to allow flavors to meld. Stir gently before serving and adjust seasoning if needed.

Notes

Rinse canned beans and corn to reduce sodium and prevent mushiness. Add avocado just before serving to avoid browning. Adjust lime juice after chilling to balance acidity. Dressing can be whisked by hand or shaken in a jar.
