Instructions

  1. Wash and dry about 2 cups of heirloom tomatoes, then dice into roughly ½-inch pieces. Place in a mixing bowl.
  2. Tear 10-12 fresh basil leaves and chop 1 tablespoon of oregano or parsley if using. Add to the tomatoes along with 1 teaspoon balsamic vinegar (if using), 3 tablespoons extra virgin olive oil, and a pinch of red pepper flakes.
  3. Sprinkle a generous pinch of sea salt and freshly ground black pepper over the tomato mixture. Stir gently to combine, then let sit for 10-15 minutes at room temperature to meld flavors.
  4. Cut the rustic loaf into ½-inch thick slices. Toast in a preheated grill pan or toaster oven until golden and crisp, about 2-3 minutes per side. The bread should be crunchy outside but still slightly tender inside.
  5. Immediately after toasting, while the bread is still warm, rub the cut side of a peeled garlic clove all over one side of each bread slice to infuse garlic flavor.
