Ingredients

Scale
  • 1 ยฝ cups all-purpose flour
  • ยฝ cup unsalted butter, softened
  • ยฝ cup granulated sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt
  • 8 oz cream cheese, softened
  • ยฝ cup powdered sugar
  • 1 tsp vanilla extract
  • ยผ cup heavy cream or half-and-half
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh kiwi, peeled and sliced
  • Optional: fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line your pizza pan with parchment paper or a silicone baking mat to prevent sticking.
  2. In a large bowl, cream together ยฝ cup softened butter and ยฝ cup granulated sugar until light and fluffy (about 2-3 minutes with an electric mixer or 5 minutes by hand). Add 1 large egg and 1 teaspoon vanilla extract; mix until combined.
  3. In a separate bowl, whisk together 1 ยฝ cups all-purpose flour, 1 teaspoon baking powder, and a pinch of salt. Gradually add the dry ingredients to the wet, mixing just until combined.
  4. Press the dough evenly into the prepared pan to about ยผ inch thickness with a slightly raised edge. Bake for 15-18 minutes or until edges turn golden brown. Let crust cool completely.
  5. While crust bakes, beat 8 oz softened cream cheese with ยฝ cup powdered sugar and 1 teaspoon vanilla extract until smooth. Slowly add ยผ cup heavy cream while beating until fluffy and spreadable.
  6. Spread an even layer of cream cheese frosting over the cooled crust.
  7. Arrange sliced strawberries, blueberries, and kiwi on top in a flag pattern. Garnish with fresh mint leaves if desired.
  8. Chill the assembled fruit pizza for at least 30 minutes before serving.

Notes

Ensure the crust is completely cooled before spreading frosting to prevent melting and sliding. Use fresh fruit for best texture and flavor; if using frozen, thaw and drain well. Cover crust edges with foil if browning too quickly. Keep knife clean between slices for neat fruit edges. For gluten-free, substitute almond flour; for dairy-free, use coconut cream instead of heavy cream.
