A quick and easy refreshing summer drink combining watermelon, cucumber, fresh mint, and lime for a perfectly balanced, thirst-quenching beverage.

  • 6 cups (900 g) cubed, seedless watermelon
  • 1 medium English cucumber, peeled and sliced (about 1 cup or 120 g)
  • 1012 fresh mint leaves, lightly bruised
  • Juice of 2 medium limes (about 3 tablespoons or 45 ml)
  • 2 tablespoons (30 ml) simple syrup or honey, to taste
  • 2 cups (475 ml) cold water
  • Ice cubes, as needed for serving

Instructions

  1. Cube the watermelon into roughly 1-inch pieces (about 6 cups or 900 g). Peel and slice the cucumber into thin rounds (around 1 cup or 120 g). Lightly bruise the mint leaves by gently crushing them between your fingers to release their oils.
  2. In your blender, combine the watermelon cubes, cucumber slices, and mint leaves. Add the fresh lime juice (about 3 tablespoons / 45 ml) and simple syrup or honey (2 tablespoons / 30 ml). Blend on high for about 1-2 minutes until smooth and frothy.
  3. Pour the blended mixture through a fine mesh strainer into a large bowl or pitcher, using a spoon to press the pulp and extract as much juice as possible.
  4. Stir in 2 cups (475 ml) of cold water to dilute the concentrate slightly. Taste and adjust sweetness or lime if needed.
  5. Refrigerate the agua fresca for at least 30 minutes or until chilled. Serve over ice cubes in tall glasses. Garnish with a sprig of mint or a thin cucumber slice.

Notes

For a more intense mint flavor, add extra mint leaves while blending but remove some before straining to avoid bitterness. Always chill before serving for best taste. You can substitute simple syrup with honey or omit sweetener for a sugar-free version. Straining is recommended for a smooth texture but can be skipped for a pulpy drink.
