  • 4 slices of deli turkey or ham (optional)
  • 1 small cucumber, thinly sliced
  • 1 small carrot, shredded
  • Fresh lettuce leaves, washed and dried
  • Salt and pepper to taste
  • 1 cup strawberries, hulled and halved
  • 1 cup seedless grapes (red or green)
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 kiwi, peeled and sliced
  • Wooden skewers (6-inch size)

Instructions

  1. Prepare the Fruit Skewers (10 minutes): Wash and dry all fruit thoroughly. Hull and halve strawberries, slice kiwi, and drain pineapple chunks. Thread fruit pieces alternately onto wooden skewers in a colorful pattern, leaving about an inch free at the bottom for holding. Set aside in the fridge to keep fresh.
  2. Make the Sandwich Filling (5 minutes): In a mixing bowl, soften cream cheese and season lightly with salt and pepper. Add shredded carrot and cucumber slices, mixing gently to combine. If using deli meat, chop into small pieces and fold in.
  3. Assemble the Sandwiches (5 minutes): Lay out bread slices on a clean surface. Spread a generous layer of the cream cheese mixture evenly over each slice. Top with a fresh lettuce leaf and then another bread slice to form a sandwich.
  4. Cut the Butterfly Shapes (3 minutes): Press the butterfly-shaped cutter firmly into each sandwich. Gently remove the excess bread from around the shape. If the filling spills out a bit, use your fingers to tuck it back inside.
  5. Pack the Bento Box: Place the butterfly sandwiches neatly inside your lunchbox. Arrange the colorful fruit skewers alongside. Optionally add a small container of yogurt or nut butter for dipping the fruit.

Use slightly stale or lightly toasted bread to hold shapes better. Pat vegetables dry before mixing to prevent sogginess. Prepare fruit skewers the night before to save time.
