Flavorful Smoked Sausage and Pepper Hero Sandwich Bar

A quick and easy sandwich bar featuring smoky sausage, sautรฉed peppers, and crusty hero rolls, perfect for casual gatherings and customizable to suit various tastes and dietary needs.

Ingredients

  • 1.5 pounds smoked kielbasa or andouille sausage, sliced into 1/4-inch rounds
  • 3 large bell peppers (red, yellow, and green), thinly sliced
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning (oregano, basil, thyme blend)
  • Salt and freshly ground black pepper, to taste
  • 6 large hero rolls or sub buns
  • Optional toppings: sliced provolone or mozzarella cheese, hot giardiniera, pickled pepperoncini, spicy mustard, mayonnaise, fresh basil leaves

Instructions

  1. Thinly slice the bell peppers and onion into 1/4-inch strips. Slice the smoked sausage into 1/4-inch rounds. Mince the garlic cloves finely.
  2. Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Warm until shimmering but not smoking.
  3. Add the sliced onions and peppers to the skillet. Stir occasionally and cook for 10-12 minutes until softened and starting to caramelize, adding a splash of water or more oil if needed. Peppers should be tender but still slightly firm.
  4. Add the minced garlic and Italian seasoning to the skillet. Stir quickly and cook for about 1 minute until fragrant.
  5. Push the peppers and onions to the side of the skillet and add the sausage slices. Let them brown on one side without moving too much, then flip to sear the other side. Cook for 5-7 minutes until heated through and slightly crisp on edges.
  6. Mix the sausage with the peppers and onions. Season with salt and freshly cracked black pepper to taste. Stir and remove from heat.
  7. Slice the hero rolls lengthwise without cutting all the way through. Optionally, toast them lightly in the oven or on a pan until golden and crisp to prevent sogginess.
  8. Arrange the sausage and pepper mixture in a large serving bowl or platter. Lay out the hero rolls and optional toppings so everyone can build their own sandwiches.

Notes

Cook peppers and onions slowly to caramelize and bring out sweetness. Let sausage crisp up by not stirring too much. Toast rolls to prevent sogginess. Season at the end to control saltiness. Can customize with toppings and substitute ingredients for dietary needs.
