Flavorful Grilled Peach Caprese Skewers with Burrata and Hot Honey

These grilled peach Caprese skewers combine smoky charred peaches, creamy burrata, fresh basil, and a drizzle of spicy-sweet hot honey for an easy and impressive summer appetizer.

  • 34 ripe but firm peaches, halved and pitted
  • 8 oz (225 g) burrata cheese, drained and torn into bite-sized pieces
  • About 20 fresh basil leaves, washed and patted dry
  • 3 tablespoons hot honey
  • 2 tablespoons extra virgin olive oil
  • Pinch of sea salt
  • Freshly ground black pepper, to taste
  • Wooden or bamboo skewers, soaked in water for 30 minutes before grilling

Instructions

  1. Wash and halve 3-4 ripe peaches. Remove the pits carefully and brush the cut sides with 2 tablespoons of extra virgin olive oil. Sprinkle lightly with sea salt.
  2. Preheat your grill to medium-high, about 375°F (190°C). If using a charcoal grill, wait until the coals are glowing and covered in white ash.
  3. Thread the peach halves (or quarters if large), torn burrata pieces, and fresh basil leaves alternately onto soaked wooden skewers. Aim for 3-4 pieces per skewer.
  4. Place skewers on the grill and cook for about 2-3 minutes per side until grill marks appear and peaches soften slightly. Use tongs to turn gently to avoid breaking the cheese.
  5. Once off the grill, arrange skewers on a serving platter and generously drizzle 3 tablespoons of hot honey over the top. Add a light crack of black pepper if desired.
  6. Serve immediately while warm or at room temperature. Eat within 30 minutes for optimal flavor.

Notes

Let burrata rest at room temperature for 15 minutes before assembling for creamier texture. Soak wooden skewers in water for 30 minutes to prevent burning. Use firm peaches that hold shape when grilled. Brush peaches with olive oil to prevent sticking and develop grill marks. Grill quickly to warm cheese without melting it completely. Adjust heat level by adding chili flakes to honey if desired. Best served fresh but can be stored refrigerated up to 24 hours and reheated gently on a grill pan.
