These brownies combine rich, fudgy chocolate with a playful Pop Rocks topping that creates a surprising crackling effect. Enhanced with espresso powder for depth, they are quick, easy, and perfect for celebrations.

  • 1 cup (227 g) unsalted butter, melted
  • 2 cups (400 g) granulated sugar
  • 4 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (125 g) all-purpose flour
  • 3/4 cup (75 g) unsweetened cocoa powder, sifted
  • 1 teaspoon espresso powder (optional but recommended)
  • 1/2 teaspoon salt
  • 1/2 cup (about 50 g) Pop Rocks candy, assorted flavors

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8 inch (20×20 cm) square baking pan with parchment paper, leaving an overhang for easy removal.
  2. Melt the butter using a microwave or stovetop, then whisk in the sugar while it’s still warm (about 3 minutes).
  3. Beat in the eggs and vanilla extract one at a time, mixing well until the batter thickens and becomes glossy (about 5 minutes).
  4. In a separate bowl, sift together the flour, cocoa powder, espresso powder, and salt (about 5 minutes).
  5. Gradually fold the dry ingredients into the wet mixture using a spatula, just until no flour streaks remain (3-4 minutes).
  6. Pour the batter into the prepared pan and spread evenly with a spatula (about 2 minutes).
  7. Bake for 25-30 minutes, checking at 25 minutes by inserting a toothpick in the center; it should come out with a few moist crumbs but not wet batter.
  8. Cool the brownies completely on a wire rack (30-45 minutes).
  9. Sprinkle the Pop Rocks evenly on top right before serving to enjoy the popping effect.

Notes

Do not add Pop Rocks before baking as they will melt and lose their fizz. Cool brownies completely before sprinkling Pop Rocks on top. For extra fudginess, add an extra egg yolk. Use quality cocoa powder for best flavor. Fold batter gently to avoid cakey brownies.
