Flavorful Brown Sugar Bourbon Grilled Peach Salad with Burrata

A quick and easy summer salad featuring smoky grilled peaches caramelized with brown sugar and bourbon, paired with creamy burrata and fresh greens for a perfect balance of flavors.

  • 4 ripe but firm peaches, halved and pitted
  • 2 tablespoons packed brown sugar (preferably dark brown sugar)
  • 3 tablespoons bourbon (e.g., Maker’s Mark)
  • 2 tablespoons olive oil, for brushing peaches and dressing greens
  • 4 cups mixed salad greens (arugula, baby spinach, or spring mix)
  • 8 ounces burrata cheese, torn into pieces
  • ½ cup toasted pecans (optional)
  • A handful of fresh basil leaves, torn
  • Balsamic glaze, for drizzling
  • Sea salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the bourbon glaze by combining brown sugar and bourbon in a small bowl. Stir until sugar starts to dissolve. Add a splash of water if too thick.
  2. Preheat grill or grill pan to medium-high heat (about 400°F / 200°C). Clean and oil grates to prevent sticking.
  3. Brush each peach half with olive oil, then coat with the brown sugar bourbon glaze using a brush. Season lightly with sea salt.
  4. Grill peaches cut side down for 3-4 minutes until grill marks appear and sugar caramelizes. Flip and grill skin side for another 3-4 minutes until tender but holding shape.
  5. Optional: Toast pecans in a dry skillet over medium heat for about 5 minutes, shaking frequently until golden and fragrant.
  6. Arrange mixed greens and basil on a large platter or bowl. Drizzle lightly with olive oil and season with salt and pepper.
  7. Place grilled peaches on top of greens. Scatter torn burrata and toasted pecans over the salad.
  8. Drizzle balsamic glaze over the entire salad.
  9. Serve immediately while peaches are warm and burrata is creamy.

Notes

Use firm peaches to prevent them from falling apart on the grill. Brush glaze sparingly to avoid flare-ups. Keep an eye on the caramelizing sugar to prevent burning. For dairy-free, substitute burrata with firm tofu or cashew-based cheese. Peaches can be swapped with nectarines or plums. For a spicy twist, add chili powder to the glaze.
