  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, sliced or diced
  • 1/2 cup shredded cheddar or Monterey Jack cheese (optional)
  • 1/2 cup salsa or pico de gallo
  • Optional toppings: sour cream, sliced jalapeños, extra cilantro

Instructions

  1. Prepare the marinade by whisking together lime juice, lime zest, minced garlic, olive oil, cumin, chili powder, salt, and pepper in a medium bowl.
  2. Add chicken breasts to the marinade, turning to coat evenly. Cover and refrigerate for at least 15 minutes, but no more than 1 hour.
  3. Cook the rice according to package instructions, optionally using chicken broth instead of water for extra flavor.
  4. Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken and cook for about 5-6 minutes per side until internal temperature reaches 165°F (74°C).
  5. Remove chicken from skillet and let rest for 5 minutes, then slice into strips or bite-sized pieces.

Do not marinate chicken longer than 1 hour to avoid mushy texture. Let chicken rest after cooking to retain juices. Use fresh lime zest for best flavor. For a juicier option, use chicken thighs and adjust cooking time accordingly. Beans and corn can be warmed in the skillet after cooking chicken for extra flavor. Substitute parsley if cilantro is unavailable. To make it dairy-free, omit cheese and sour cream or use plant-based alternatives.
