Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the sliced strawberries, 2 tablespoons sugar, vanilla extract, and lemon juice. Stir gently and let sit for at least 10 minutes.
  3. In a small bowl, whisk together the flour, 2 tablespoons sugar, baking powder, and salt. Add the cold butter cubes and cut into the flour using a pastry cutter or two forks until the mixture resembles coarse crumbs with some pea-sized butter pieces.
  4. Make a well in the center of the flour mixture. Pour in the buttermilk and ½ teaspoon vanilla. Stir with a fork just until combined; the dough will be shaggy and slightly sticky.
  5. Drop the dough onto the prepared baking sheet in two equal mounds. Gently flatten each into a 3-inch round. Bake for 12-14 minutes, until golden brown and firm to the touch.
  6. Let the shortcakes cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  7. In a small bowl, beat the cold heavy cream, powdered sugar, and ½ teaspoon vanilla extract with an electric mixer on medium-high speed until soft peaks form, about 2-3 minutes.
  8. Crumble or cube the cooled shortcakes. In each trifle dish, layer: a third of the shortcake pieces, a third of the strawberries with their juice, and a third of the whipped cream. Repeat twice more, ending with a dollop of cream on top.
  9. Garnish with a fresh strawberry slice and a mint leaf if desired. Serve immediately, or refrigerate for up to 30 minutes.

Notes

Keep butter cold for flaky shortcake. Do not overmix the dough. Let strawberries macerate for at least 10 minutes. Whip cream to soft peaks only. Assemble just before serving for best texture. For gluten-free, use a 1:1 gluten-free baking blend. For vegan, use coconut cream and cold coconut oil.
