  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves (optional)

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Position the rack in the middle of the oven. Line your baking sheet with parchment paper or foil for easier cleanup.
  2. Make the apple cider reduction. In a small saucepan over medium-high heat, combine the apple cider, honey, apple cider vinegar, Dijon mustard, cinnamon, nutmeg, and cayenne if using. Bring to a boil, then reduce the heat to medium-low and let it simmer for about 12-15 minutes. You’re looking for it to reduce by about half, becoming syrupy and fragrant. Stir occasionally to prevent scorching. When it coats the back of a spoon, it’s ready. Remove from heat and let it cool slightly.
  3. Prepare the carrots. While the cider reduces, peel your carrots and trim off the tops and tips. If your carrots are thick (more than 1 inch in diameter at the top), cut them in half lengthwise. If they’re medium-sized, leave them whole. Aim for uniform thickness so they cook evenly.

  7. Roast for 20 minutes. Place the pan in the oven and roast for 20 minutes. After 20 minutes, remove the pan and use tongs to flip each carrot.
  8. Glaze again and continue roasting. Drizzle the reserved apple cider reduction over the carrots and toss gently to coat. Return to the oven for another 10-15 minutes. The carrots are done when they’re tender enough to be pierced easily with a fork, and the edges are sticky and caramelized.
  9. Finish under the broiler (optional but amazing). For extra caramelization, switch your oven to broil for the last 2-3 minutes. Watch them carefullyโ€”they can go from perfect to burnt in seconds.
  10. Garnish and serve. Transfer the carrots to a serving platter. Sprinkle with fresh parsley, thyme leaves if using, and a generous pinch of flaky sea salt. Serve immediately while they’re warm and sticky.
