Ingredients

Scale
  • 8 oz cream cheese, softened
  • Black sesame seeds (for ghost eyes and mouth)
  • 8 oz cheddar cheese, sliced or cubed
  • 6 oz salami, thinly sliced
  • 4 oz prosciutto, torn into pieces
  • 1 cup mixed olives (green and black, pitted)
  • 1 cup grapes (red or green)
  • 1 cup cherry tomatoes (optional)
  • 1 cup crackers (water crackers, butter crackers, or gluten-free rice crackers)
  • 1 cup nuts (almonds or walnuts)
  • Fresh rosemary sprigs (for decorating)
  • Dark chocolate pieces (optional)
  • Dried apricots or figs (optional)
  • Pickled vegetables (cornichons or pickled onions, optional)

Instructions

  1. Make the ghost toppers first. Place the softened cream cheese in a small bowl. Using a fork or spatula, stir it until it’s smooth and spreadable—no lumps. Transfer the cream cheese to your piping bag or ziplock bag. Snip off a tiny corner (about 1/8 inch wide). On a parchment-lined plate, pipe small ghost shapes: start with a round head, then pull downward to create a tapered body. Each ghost should be about 1.5 inches tall. Don’t worry if they’re not perfect—imperfect ghosts look more charming!…
  2. Add the ghost faces. While the cream cheese is still soft, gently press two black sesame seeds for eyes and one or two for a mouth. The seeds will stick naturally. If the cream cheese starts to firm up, let the ghosts sit at room temperature for 5 minutes before adding the seeds. Place the plate of ghosts in the refrigerator for at least 15 minutes to firm up—this makes them easier to transfer to the board.
  3. Prepare the board base. Take your large board or platter and arrange the small bowls first. Place bowls for olives, nuts, and grapes in different sections of the board. This creates anchors for the rest of the ingredients. Leave plenty of open space for the meats, cheeses, and crackers.
  4. Add the cheeses. Slice the cheddar into cubes or thin triangles. Arrange them in small clusters around the board, leaving gaps for other items. If you’re using a soft cheese like brie, place it whole and let guests cut into it. The cheese should be at room temperature for best flavor—take it out of the fridge 20 minutes before serving.
  5. Layer the meats. Fold the salami slices into quarters or roll them into small cones. Tear the prosciutto into rustic pieces. Arrange the meats near the cheeses, creating visual contrast. The folds and tears add texture and make the board look abundant.
  6. Fill in with crackers and produce. Scatter crackers in clusters around the board. Add the grapes, cherry tomatoes, and any other fresh produce. Tuck them into empty spaces—don’t leave any bare spots. The goal is to make the board look full and inviting.
  7. Add the ghost toppers. Remove the ghosts from the refrigerator. Using a small spatula or your fingers, gently place them on top of crackers, cheese cubes, or directly on the board. Space them out so they’re visible. If a ghost breaks, just pipe a new one—it takes 10 seconds.
  8. Decorate with rosemary. Place small sprigs of fresh rosemary around the board, tucking them between items. They look like tiny spooky trees or haunted forest branches. This adds a Halloween vibe without any fake decorations.
  9. Final check. Step back and look at your board. Are there any empty spaces? Fill them with extra crackers or nuts. Is the color balanced? Add more red (tomatoes, grapes) or green (rosemary) if needed. The board should look abundant and playful.

Notes

Full-fat cream cheese is essential for piping. Chill the ghost toppers for at least 15 minutes before adding to the board. If transporting, keep ghosts separate and add at the destination. The board can be customized with seasonal fruits, spicy meats, or sweet treats.
