Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110ยฐF to 115ยฐF), brown sugar, and active dry yeast. Stir gently and let sit for 5 to 10 minutes until foamy and bubbly.
  2. Make the dough: Add melted butter, salt, and 1 cup of flour to the yeast mixture. Stir until combined, then gradually add remaining 3 cups of flour, one cup at a time, until a smooth, slightly tacky dough forms.
  3. Knead the dough: Turn dough onto a lightly floured surface and knead for 5 to 7 minutes (or use a stand mixer with dough hook for 4 to 5 minutes) until smooth and elastic.
  4. First rise: Place dough in a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let rise in a warm spot for about 1 hour until doubled in size.
  5. Shape the pretzel bites: Punch down the dough, divide into 4 equal pieces, roll each into a 12-14 inch rope, and cut each rope into 1-inch pieces (about 12-15 bites per rope).
  6. Prepare the baking soda bath: In a large pot, bring 8 cups of water to a rolling boil. Add โ…“ cup baking soda and 1 tablespoon brown sugar (water will foam). Stir gently until dissolved, then reduce heat to a gentle simmer.
