  • 1 large very ripe banana
  • 1 cup rolled oats
  • 1/3 cup vanilla or unflavored protein powder
  • 12 tablespoons honey or maple syrup (optional)
  • 1/4 cup chocolate chips (optional)
  • 1 tablespoon chia seeds or flaxseed meal (optional)
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Mash the banana in a mixing bowl until smooth.
  2. Add peanut butter and stir until fully combined.
  3. If using, add honey or maple syrup, vanilla extract, and cinnamon; stir.
  4. Sprinkle protein powder over the mixture and stir until incorporated.
  5. Add rolled oats and stir until evenly coated.
  6. Fold in chocolate chips, chia seeds, or other add-ins if desired.
  7. Chill the mixture in the refrigerator for 15-20 minutes (optional but recommended).
  8. Roll the mixture into 12-15 balls using a cookie scoop or tablespoon.
  9. Place the balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to set.
  10. Serve cold or at room temperature. Store leftovers in an airtight container in the refrigerator.

Notes

Use a very ripe banana for natural sweetness and moisture. If the mixture is too dry, add a teaspoon of water or milk. If too wet, add a tablespoon more oats. Chilling the mixture before rolling makes it easier to handle. For a prettier presentation, press a few chocolate chips on top of each bite after rolling.
