  • ยฝ cup (100 grams) granulated sugar
  • ยผ cup (50 grams, packed) light brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon (5 ml) vanilla extract
  • ยผ cup (60 grams) plain yogurt or sour cream
  • 1ยฝ cups (190 grams) all-purpose flour
  • 1 teaspoon (5 grams) baking soda
  • ยฝ teaspoon (3 grams) salt
  • 1 teaspoon (3 grams) ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease the exposed ends.
  2. Brown the butter: Place ยฝ cup (113 grams) unsalted butter in a small saucepan over medium heat. Melt completely, then swirl occasionally. After 5-7 minutes, when the butter turns amber and smells nutty, remove from heat and pour into a heatproof bowl to stop cooking.
  3. Let the butter cool for about 5 minutes until warm but not hot.
  4. In a large mixing bowl, mash the bananas with a fork until mostly smooth with a few small lumps.
  5. Add the cooled browned butter, granulated sugar, brown sugar, eggs, vanilla extract, and yogurt or sour cream. Whisk until smooth and well combined.
  6. Sprinkle the flour, baking soda, salt, and cinnamon (if using) over the wet mixture. Fold gently with a spatula until just combinedโ€”do not overmix. The batter will be thick and slightly lumpy.
  7. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  8. Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with foil after 40 minutes.
  9. Cool in the pan for 10 minutes, then use the parchment handles to lift the bread out onto a cooling rack. Cool completely before slicing (at least 30 minutes).

Don’t rush the browned butterโ€”watch it closely to avoid burning. Use room temperature ingredients for best results. Measure flour correctly by spooning and leveling. Let the bread cool completely before slicing to prevent crumbling. The bread tastes even better the next day.
